Peanut Butter Pancakes (NOT Vegan)

These pancakes are very similar to the 'Healthy Pancakes' I posted yesterday, however, for those who can't get hold of Weetabix, these are made with oats! So simple, easy and healthy :)

Ingredients;

  • 2 whole eggs
  • 1 Ripe Banana
  • 20g-25g of oats (instant, rolled or old fashioned)
  • 2tbsp Peanut Butter


Firstly, you need a blender that can grind or chop! Basically a flat blade. If you don't then you might find these difficult to make. You need to blend the oats until they're a fine powder! Similar texture to flour. Next, add the eggs and banana and blend with the normal blade you would always use (could vary for different people) I found the flat blade didn't work for me!
Once everything is blended to a thick mixture, and the 2 Tbsp of peanut butter, not only will this add flavor but it will also thicken the mixture! And blend again. Test the mixture on a frying pan.. if it runs everywhere (kind of crepe like) then add more peanut butter until the consistency is right.
Pour small parts of the mixture onto the pan, cook on each side for approx 2 minutes on low heat or until golden brown. Once they're all cooked, experiment with different toppings! I recommend maple syrup or MORE PEANUT BUTTER (if you're cray cray like me) hahah!
