Healthy Pancakes (NOT Vegan)

Without a doubt, these are the best pancakes I've ever made. (although I haven't made many, they're still yummy) AND GUESS WHAT! They were 110% healthy with no added sugar, preservatives or hidden nasties.
And no, they weren't the disgusting 2 ingredient 'egg omelette' they were actual pancakes.. with a twist!

  • 2 WHOLE eggs, not egg whites!!
  • 1 very ripe banana
  • 1 whole weetabix
  • 1 tsp cinnamon (optional)

BASICALLY.. chuck it all in a blender, whizz it up and BAM, pancake batter.
And no, these won't work if you don't have a blender sorry!

Grab a non-stick frying pan and spray with 1cal spray or any oil, i recommend coconut oil if you're trying to be healthy! Pour a small amount of batter on (low heat) leave for about 30-60 seconds then test the edges to see if they are firm underneath, may need longer!
Once you are able to slide a spatula under, FLIP! Cook on other side and place on a plate ready to cook the next one. Repeat untill all batter is goooone. I  managed to get about 6 pancakes out of this, you could definitely get more if you make them slightly smaller and thinner but I prefer mine FLUFFY!

And finally, the best part.. TOPPINGS! Yum:) I reccomend maple syrup, peanut butter, yoghurt, rapsberries, blueberries, banana, chocolate chips! Go wild!
